Turkey Chili | Healthy Meals in Minutes

With Fall in the air and Winter on the way, Evening Edition’s Jordan Taylor and our friends from Dietetics to show us a healthy way to stay warm this season! Check out the full recipe below:

Turkey Chili

Ingredients:

· 1 1/2 teaspoons olive oil

· 1 pound ground turkey

· 1 onion, chopped

· 1 green pepper, chopped

· 2 cups water

· 1 (28 ounce) can canned crushed tomatoes

· 1 (16 ounce) can canned kidney beans – drained, rinsed, and mashed

· 1 tablespoon garlic, minced

· 2 tablespoons chili powder

· 1/2 teaspoon paprika

· 1/2 teaspoon dried oregano

· 1/2 teaspoon ground cayenne pepper

· 1/2 teaspoon ground cumin

· 1/2 teaspoon salt

· 1/2 teaspoon ground black pepper

Directions:

1. Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and pepper and cook until tender.

2. Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

Details Emerge for Campus Reorganization

Details for SIU Chancellor Carlo Montemagno’s academic reorganization plan were released during an open forum he held today.

The chancellor’s plan primarily focuses on the elimination of academic departments and transitioning them into schools under re-organized colleges. The following is the proposed re-organization of 5 colleges and 18 schools released by the chancellor and where existing departments would fall.

School of Law

School of Medicine

School of Education
–will be more like elevated like School of Law and School of Medicine
–teaching education programs; counseling and quantitative methods; curriculum, instruction and administration certification, special education and workforce education and development.

College of Engineering, Physical Science and Applied Technology
-School of Engineering
— civil, computer, electrical and mechanical engineering, energy fuel and management.

-School of Homeland Security
— criminal justice, new cyber-security program and forensic sciences programs, public safety management, information systems technology
–NEW: Police Academy – would require state approval

-School of Physical Sciences
— chemistry, computer science, mathematics and physics.
–NEW: Machine learning and material science

-School of Transportation and Technology
— automotive technology, aviation management and flight, aviation technologies, electrical engineering technology, industrial management and applied engineering, technical resource management and, quality engineering and management.
–NEW: program in robotics and automation

College of Agricultural and Life Science
-School of Integrated Biological Sciences
— anatomy, fermentation science, neuroscience, plant biology, biochemistry and molecular biology, biological sciences, microbiology, physiology and pre-medicine, pre-nursing, pre-dentistry and pre-veterinary programs.
–NEW: program in bioinformatics

-School of Production Agriculture
— agricultural systems and education; agronomy or, as currently known, our soil and crop programs; horticulture; and animal science.

-School of Sustainability and Earth Science

Tomato and Mozzarella Salad

Fresh Tomato & Mozzarella Salad

1 1⁄2 medium tomatoes

1⁄4 lb fresh mozzarella cheese

1⁄4 cup torn basil leaves

1 1⁄2 tablespoons olive oil

2 teaspoons balsamic vinegar

1⁄2 to taste kosher salt or 1⁄2 to taste sea salt, to taste

 

Directions:

Cut the tomatoes and mozzarella into large cubes.

Add basil leaves and drizzle w/ vinegar and olive oil.

Stir lightly.

Sprinkle with a little salt.

Chill.
